Recipe #9: Quinoa Patties

A healthy versatile meatless and flavorsome crispy and crunchy Quinoa for the veggies lovers!

INGREDIENTS:

  • One of the key points while making Quinoa is to rinse thoroughly under cold water while scrubbing it with fingers to get rid of the impurities. Repeat these 2 -3 times

  • Transfer the rinsed quinoa in a medium saucepan and add water with the ratio of 1:2 add salt and bring it to boil over high heat and reduce to low , cover it with a lid and simmer until the liquid is absorbed for 15 minutes until the quinoa is soft and fluffy.

  • Remove from heat, fluff it with a fork and allow it to cool.

  • Coarsely grind the green peas , sweet corn, ginger & garlic, green chilies and keep aside.

  • Take a wide bowl add the cooked quinoa along with peas and corn mixture , shredded carrots, onions, mashed potatoes, curry leaves and coriander leaves, chickpea flour and salt to taste and mix well till combined.

  • Shape the mixture into patties , flatten them gently between your palms and smoothen around the edges.

  • Heat 2 tbsp. of oil in a non-stick pan on medium - low heat , and carefully flip the patties , shallow fry for 2 minutes on each side , turning carefully until the bottoms are golden brown crispy and crunchy.

  • Remove from the skillet and transfer to a kitchen towel and serve with tomato sauce.
