Recipe #11: Semolina Fritters (Rava Pakoras)

INGREDIENTS:

DIRECTIONS:

  1. Roast the semolina and wheat flour on medium flame in a deep bottomed vessel. Take it off the flame once it changes color.

  2. Transfer it into a large wide bowl and add finely chopped green chilies, ginger, coriander leaves ,curry leaves, spring onions ,onions, turmeric powder, carom seeds, asafoetida and salt.

  3. Mix it well and add water. Make sure the mixture is not too watery.

  4. Heat oil in a pan. The oil should not be too hot nor normal, if it is not hot the oil will absorb oil while frying and will be too oil-laden once fried .

  5. Take a small portion of the dough and drop it in hot oil. Fry it in batches. Fry on medium flame till the fritters turns golden brown .

  6. Turn the fritters a few times for it to fry evenly. Take them off the oil and drain them on a kitchen grade paper towel.

Serve with tomato ketchup and Indian masala chai.
