Recipe #5: Gujarati Methi Ka Thepla; Bread from Gujarat IND

DESCRIPTION: A spicy flat bread with loads of fenugreek leaves a delicious and healthy and flavorful. Traditional delicacy dish from Gujarat, India.

INGREDIENTS:

  • In a large mixing bowl add wheat flour, finely chopped fenugreek leaves, powdered sugar, turmeric powder, asafoetida, carom seeds, sesame seeds, ginger, garlic, green chilli paste, salt, oil, fresh yoghurt. Knead it into a smooth dough. Use water to help with the right consistency.

  • Add 2 tbsps of oil to coat the dough, knead well until it is firm and smooth.

  • Cover and allow the dough to rest for 2 hours.

  • Preheat the iron -skillet on medium heat.

  • Divide the thepla dough into equal portions, roll the thepla portions, dust in flour and roll them out into thin circles like roti put thepla on hot Tava and keep flame on high.

  • When bubbles appear on top turn it over, lower the flame. Turn the thepala and apply oil/ghee on both sides; roast lightly by pressing the thepla.

  • Remove the thepla , prepare the remaining methi thepla in the same manner.

Serve hot with achar (Indian pickle).
