Recipe #3: Wheat Jaggery - Coconut Cookies

WHEAT JAGGERY - COCONUT COOKIES

Appetizing, crispy and crunchy melt in mouth cookies.

INGREDIENTS:

DIRECTIONS:

  1. In a large bowl, add clarified butter and use a hand blender to blend it well until it turns creamy.

  2. Now add organic whole wheat flour, cardamom powder, powdered cashews, country sugar and milk, mix well until well combined and forms a smooth dough. Cover the bowl with cling film and let it rest for roughly 20 minutes.

  3. Knead the dough again. Now divide the dough into equal size balls. Take a small portion of the dough and gently flatten the ball between your palm to form into a circle.

  4. Top the cookies with desiccated coconut and press it gently.

  5. You can use a cookie cutter to make it more presentable. Repeat the same procedure for all the cookies and line a baking tray with parchment paper.

  6. Bake the cookies in a preheated oven at 180 degrees centigrade for 19 – 20 minutes.

  7. Remove from the oven and let it cool on a baking sheet for 2-3 minutes.

  8. Transfer it to a wire rack for it to be cooled completely, from all directions uniformly.

  9. Serve the cookies with a dash of cashew crumbles & desiccated coconut.

A wonderful delicacy is all ready to please you fussy eaters.
