BLUEBERRY FINGER –MILLET BANANA MUFFINS

These muffins are super healthy and super yummy, rich in taste, soft and spongy inside, and crispy outside, filled with lots of blueberries in every bite, making every bite special.

Start by mashing the banana using a fork in a large bowl. The banana needs to be ripe enough that it mashes up properly without much effort.
Take a large bowl, add mashed banana, eggs along with yolk, and blend it well well using a hand blender.
Now add butter and blend it until it is smooth. Then add coconut sugar, cardamom powder and give it a good mix.
Now add organic finger – millet flour, organic whole wheat flour and, baking powder and gently fold using a silicone spatula in one direction; adding milk a little at a time.
Make sure everything is well combined; remember not to over mix. Add washed and well-dried blueberries to the batter, and gently stir.
Use an ice cream scoop to spoon out the batter up into the prepared and lined muffin pan with the muffin liners in place Tap the tray to eliminate air bubbles if any.
Bake at 180 degrees Centigrade for 20-22 minutes. Note: Timings are tentative and may vary from oven to oven.
Take it out from the oven and let it cool on a baking mat for 3-5 minutes.
Transfer it to a wire rack for it to be cooled completely, from all directions uniformly.
You can ice it up with some guilt free low fat whipping cream that is has no hydrogenated oils or high fructose corn syrup and its gluten-free. (optional*)
