OATMEAL RAISIN COOKIES

Take a large bowl and combine crushed oats, organic whole wheat flour, baking powder, cardamom powder, cinnamon powder and a pinch of salt. Mix everything until it is well combined and set aside.
Now, using a hand whisk or a stand mixer, add butter (room temperature) and the powdered country sugar and egg. If you're using a stand mixer, use the paddle attachment until it is well-combined to form a dough.
Add softened butter kept at room temperature and powdered country sugar, then add milk to the creamed butter and sugar mixture and mix again until the milk is well combined.
Now add the dry ingredients and give it a good mix until the dry ingredients are mixed well and combined well.
Finally, stir in the walnuts, almonds and raisins and mix again until they are evenly mixed and distributed throughout the batter. Now scrape the sides of the bowl using a silicone spatula with ease. We can now begin making the cookies.
Line a baking sheet with parchment paper. You can also use a cooking spray if you're out of parchment paper.
Take a small portion of the dough in your hands and gently flatten the ball between your palm. Repeat the same for all the cookies and lay them on the baking tray.
Bake the cookies in a preheated oven at 180 degrees centigrade for approximately 20- 22 minutes. Note: Timings are tentative and may vary from oven to oven.
Take off the cookies from the oven and let them rest on the baking mat for 2-3 minutes.
Transfer them to a wire rack, and let them cool completely. Transferring the cookies to a wire rack will ensure that air flows evenly from all directions.
